Just a few examples of some of the delicious recipes - Southwest Caviar, Bean Chowder, Husband's Delight, Aurelia's Pecan Pie.
Southwest Caviar
1 can (15 oz.) black eyed peas
1 clove garlic, minced
2 chopped green onions (with tops)
1 can (14 oz.) green chilies, chopped
1 jar (15 oz.) Old English cheese spread
Drain liquid from peas and mash in a food processor or blender. Saute galic and onion in margarine. Add peas and remaining ingredients. Cook on low heat until heated through. Serve warm on crackers. Preparation time: 20 minutes. Doubles or triples easily.
Bean Chowder
Grocery List or things you need to be sure you have on hand:
Pinto beans (either start with dry beans and cook with your favorite seasonings) or you can use canned, lean ground beef, cooking onion, canned tomatoes, catsup, chili seasoning.
Approximate Preparation Time: Prep time 20 minutes; simmer 30 - 45 minutes
Ease of Preparation: Easy
List of Ingredients:
3 - 4 cups cooked pinto beans
2 lbs. ground beef
1 large cooking onion, chopped
2 15 ounce cans of tomatoes
3 Tablespoons chile seasoning
1/2 to 1 cup catsup, depending on your taste
Directions: Brown ground beef and chopped onions. Drain off excess grease. Place tomatoes in a blender, then add to meat. Add catsup, chili seasoning. Add beans last, then simmer for 30 - 45 minutes
Hints, Tips and Variations: You can use leftover pinto beans if they haven't been cooked with ham or if you can separate the ham out. You can use fatty ground beef to save some money and then drain off the excess fat. Catsup adds sweetness to the taste so you can adjust it based on your own taste. Likewise, some people like more chili taste and some like less so you can start with a smaller amount and always add more.
Good Cooks Tell All: This was a staple on the lunch menu in the Tulsa Public Schools when I was growing up. It was served with Fritos and it was always a big favorite of the students. On top of that, the yummiest, most heavenly hot cinnamon rolls were served on the same day! It's a good thing I went to school before the nutrition police came along! Just kidding. Actually the bean chowder is very nutritious if excess grease is removed. The Fritos and cinnamon rolls are a different story.

Skinny It Down: Use lean ground beef and sugar free catsup
Husband's Delight
1 8 oz. package skinny egg noodles
1 clove garlic, minced
Cavender's seasoning to taste
11/2 pounds lean ground beef
1 Tablespoon butter
3 8 oz. cans tomato sauce
Salt and Papper to taste
1 Tablespoon sugar
1 cup cottage cheese
1 8 oz. package cream cheese
1/4 cup sour cream
1/3 cup chopped onion OR
3 - 4 chopped green onions
1/4 cup chopped green pepper
1 cup grated Cheddar Cheese
Heat oven to 350 degrees. Cook noodles according to package directions. Brown ground beef and garlic in butter. Sprinkle ground beef liberally with Cavender's seasoning while it's cooking. When brown, empty cooked ground beef into a colander placed in the sink and rinse well with hot water to get rid of some of the fat. Put back in the pan and add tomato sauce, salt and pepper and sugar. Blend the cheeses and add sour cream, onion and green pepper to the cheese mixture. In a greased 9 X 13 inch casserole put half of the cooked noodles, then a layer of cheese mixture, and then the rest of the noodles. Cover with ground beef misture. Bank for 20 to 25 minutes. Add the cheese and let cook another 5 to 10 minutes until the cheese melts. You can save calories, fat, etc. if you use lean ground beef, low fat or fat free cottage cheese, cream cheese, sour cream and cheddar cheese.
Aurelia's Pecan Pie
Grocery List or things you have to have on hand: For pie shell: all purpose flour, table salt, solid shortening. Or, you can use a ready made pie crust. For pie - sugar, waffle syrup (not Karo type syrup), eggs, table salt, butter or margarine, real vanilla, pecan pieces or halves. Pecan halves make a prettier pie.
Approximate Preparation Time: 10 minutes prep time. About 40 minutes baking time.
Ease of Preparation: Filling is EASY. Pie crust is either easy or hard, depending on your comfort level with making pie crust. I cheat and use a ready made pie shell.
List of Ingredients:
Pie Shell:
1 cup all-purpose flour
1/2 teaspoon salt
1/3 cup solid shortening
Pecan filling
1/2 cup sugar
1 cup waffle syrup
3 eggs
1/8 teaspoon salt
4 tablespoons, melted butter
1 teaspoon real vanilla extract
1 cup pecans
Directions: Pie Shell: Blend shortening into flour and salt mixture until particles are the size of green peas. Gradually add 3 Tablespoons of cold water until mixture can be formed into a ball. Roll out on floured surface and place in a 9" pie pan. Trim so that about 1" of pie crust extends over the edge of the pie pan. Turn edge under and flute the crust. Pie Filling: Beat eggs, add sugar, salt, syrup, melted butter, vanilla and pecans. Pour into unbaked pie shell. Bake at 350 degrees for 30 to 35 minutes or until bubbling in the center. Allow to cool before serving. Makes 6 to 8 pieces.
Hints, Tips and Variations: I never vary this recipe. I use a waffle syrup made here in Oklahoma, Griffin's Waffle Syrup. It is thicker and has a little different flavor than Karo syrup and I think it is really the 'secret' ingredient in this recipe. I also usually use home grown Oklahoma pecans. Some people like to add ice cream or whipped cream to the top but I like it with just a cup of black coffee.
