Hummingbird Cake
Grocery List or things you need to be sure you have on hand: flour, sugar, cinnamon, baking soda, table salt, eggs, vegetable oil, vanilla bananas, pecans or walnuts (optional), canned crushed pineapple; cream cheese, butter or margarine, powdered sugar Approximate Preparation Time: 20 minutes preparation; 30 minutes cooking time Ease of Preparation: Moderately Complicated List of Ingredients: Cake: 3 cups flour 2 cups sugar 1 teaspoon cinnamon 1 teaspoon baking soda 1 teaspoon salt 3 eggs, beaten 1 1/2 cup cooking oil 1 teaspoon vanilla 2 cups chopped banana 1 cup chopped nuts 1 8 oz. can undrained crushed pineapple Icing: 8 oz. package cream cheese, softened 1 stick butter or margarine 1 lb. box powdered sugar 1 teaspoon vanilla Directions: Cake: Combine flour, sugar, cinnamon, soda and salt. Mix together until blended. Stir in eggs, oil and vanilla, then add chopped bananas (chopped), nuts and pineapple. Pour into a jelly roll pan (13" by 9" by 2") or 3 8" layer pans and bake at 350 degrees for 30 minutes. Cool before icing. Icing: Combine softened cream cheese, butter and vanilla. Gradually add in powdered sugar so that it can be dissolved evenly. Spread on cooled cake. Hints, Tips and Variations If you don't like nuts or you're cooking for somebody who can't eat them, you can omit them. Good Cooks Tell All: This is one of the most delicious, moist cakes I've ever eaten. It's a talking cake because it keeps calling your name until you have another piece.
