Hot Chicken Salad


Grocery List or things you need to have on hand
:  cooked chicken, celery, slivered almonds, onion, salt or seasoned salt (optional), mayonnaise, potato chips, Parmesan or Romano cheese.
Approximate Preparation Time:  20 minutes plus 30 minutes baking time.  This does not count the time to cook and prepare the chicken.
Ease of Preparation:  Moderately complicated
List of Ingredients:
2 cups cooked chicken
2 cups celery, chopped
1/2 cup slivered almonds
1/4 cup onion, chopped
1/2 teaspoon salt (optional)
1 cup mayonnaise
Topping:
1/2 cup Parmesan or Romano cheese, shredded
1 cup crushed potato chips
Directions:  Combine chicken, almonds, celery, onion and mayonnaise.  Salt is optional depending on whether your chicken was cooked with salt.  Spread mixture in a casserole dish and cover with the crushed potato chips.  Bake at 350 degrees for 30 minutes.  When you take it out of the oven, sprinkle cheese over the top.
Hints, Tips and Variations:  Different people like different amounts of saltiness.  In this case, both the potato chips and cheese add salt so you can follow your preference.  The original recipe called for Accent (MSG) seasoning but I don't see the need for it.
Good Cooks Tell All:  This is a very nice, crunchy, hearty main dish and a little different twist on chicken casseroles.  We prefer Romano cheese over Parmesan.  It seems less bitter, is easier to grate and doesn't smell as strong when cooking.
