Eggplant Italian


Grocery List or things you have to have on hand
eggplant, olive oil, garlic, spaghetti sauce, green pepper, onion, tomato juice, parmesan cheese

List of Ingredients
1 medium eggplant,cut in 2 in. strips
olive oil to coat pan
1 or 2 cloves garlic
1 medium jar or fresh spaghetti sauce
1/2 medium onion, chopped
1 medium green pepper. chopped
1 to 2 cups tomato juice
1/2 lb. grated parmesan cheese
DirectionsSpray a 9 X 13 glass dish with Pam.  Heat one to 2 T. olive oil in a medium skillet.  Add one large clove of garlic and saute until oil is infused into oil.  Peel and slice eggplant and cut into 1 1/2 to 2 inch strips. Lightly brown strips of eggplant in oil, drain on paper towels. Place in glass dish.  Add a layer of spaghetti sauce on top of eggplant followed by pieces of green pepper and onion. Add tomato juice as needed to give eggplant liquid to cook in. Cook, uncovered in 350 degree oven for 25 minutes.  Add Parmesan and cook another 5 minutes.
Hints, Tips and VariationsSimply add a green salad with Italian dressing for a great meal.   My daughter-in-law who grew up in New York breads her eggplant before browning and it takes up some of the water in the eggplant.
