Cobey's Criss Cross Potatoes


Grocery List or things you need to be sure you have on hand:  Baking potatoes, high quality, high taste margarine, salt and pepper
Approximate Preparation Time:  3 minutes prep, 30-45 minues cooking
Ease of Preparation: Very Easy

Baking Potatoes with skin on 
High quality, high taste margarine
Salt
Pepper
Directions: Cut potatoes in half, length-wise, s
core the white part of the potato, cutting down about 1/4 inch.  Make a criss-cross pattern.  Rub margarine over the scored surface of potato.  Put in oven and bake at 400 degrees until top is brown and crisp.  Baste potato top with margarine once more toward end of cooking process.
Hints, Tips and Variations: This is a very easy recipe which originated more than 50 years ago in Aroostock County, Maine, where potatoes are a large local crop.
Good Cooks Tell All:  These are as good or better than french fries and with much less fat.  Everybody loves them, including the kids.
