Cherry Moseley's Awesome Salsa

 

Grocery List or things you need to have on hand:  Roma tomatoes, green onions, canned chopped green chiles, canned sliced black olives, PACE (or equivalent) thick and chunky salsa, taco seasoning mix, chopped garlic, ripe avocados.
Approximate Preparation Time:  30 minutes
Ease of Preparation:  Easy, but it involves a lot of chopping
List of Ingredients
8 Roma tomatoes, chopped

6 green onions, chopped
1 4 oz. can chopped green chiles
2 2.5 oz or 1 3.8 oz can sliced black olives, drained
16 oz. jar of PACE (or equivalent) thick and chunky salsa
1 package dry taco seasoning
1 heaping Tablespoon chopped garlic
2 - 3 ripe avocados
Directions
Drain black olives.  Chop tomatoes, green onions, garlic.  Combine all ingredients except avocados.  When you're ready to serve, peel, seed and chop the avocados and add to mixture.
Hints, tips and variations
Roma tomatoes tend to hold up better than some other varieties.  If you have a salsa maker or other good chopping device, you can save yourself a lot of time with preparation.  Make sure your tomatoes and avocados are ripe and ready to use if you buy them the same day you plan to use them. You can also use the garlic that comes pre-chopped in a jar to save time.  Some people have suggested adding black beans.  Sounds yummy.

This salsa recipe makes several cups and is good to take to parties and family gatherings.  It disappears fast!  The tomatoes keep the avocados from turning dark but will taste fresher if added just before serving.
