Cauliflower Confetti
Colorful, Cool, Tasty!

 

Grocery List or things you need to have on hand:  cauliflower, red and yellow bell peppers, snap peas, scallions (green onions), Heinz Salad Vinegar, liquid vegetable oil, sugar, salt, paprika, black pepper.
Approximate Preparation Time:  15 minutes
Ease of Preparation:  Very Easy
List of Ingredients:
1 head of cauliflower
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1/4 - 1/3 lb. fresh snap peas
2 bunches scallions
Dressing:
2/3 cup Heinz Salad Vinegar
2/3 cup liquid vegetable oil
2 T. granulated sugar
1 t. salt
1/2 t. paprika
dash of black pepper
Directions:  Prepare vegetables and place in your favorite salad bowl.  Combine dressing ingredients in a container with a lid and shake vigorously until well mixed.  Pour over cut up vegetables.  Allow to marinate for a few hours before serving.
Hints, Tips and Variations:  This dressing recipe is from the Heinz Salad Vinegar bottle.  Salad vinegar is not that easy to find.  It is a combination of white vinegar, malt vinegar, sugar and water.  You could probably use other flavored vinegars and get about the same result.  Any liquid vegetable is going to have about the same ability to combine with the vinegar, but bear in mind that some of them are going to have a unique flavor of their own.  All the liquid oils have about the same value in terms of health and nutritional content.  You certainly can use other combinations of vegetables because this is a good general dressing recipe.
Good Cooks Tell All:  I like to make these big marinated salad recipes on the weekend and keep them in the refrigerator to use as a side dish throughout the week.  They are very nutritious and delicious.  Although they are in an oil based dressing, most of that stays behind in the bowl if you serve them with a slotted spoon.  This will also be a good one for covered dish dinners because IT IS SO PRETTY!
