Becky's Wonderful Salsa


Grocery List or things you need to be sure you have on hand: fresh tomatoes, onions, green peppers, jalapeno peppers, garlic, cumin, pepper, salt, sugar, vinegar, tomato sauce, tomato paste
Approximate Preparation Time:  1 hour
Ease of Preparation:  Moderately Complicated
List of Ingredients
8 cups tomatoes, peeled, chopped and drained
2 1/2 cups onions, chopped
1 1/2 cups green peppers
1 cup jalapeno peppers, chopped
6 cloves garlic, minced
2 tsp. cumin
2 tsp pepper
1/8 cup canning salt
1/3 cup sugar
1/3 cup vinegar
1 (15 ounce) can tomato sauce
1 (12 ounce) can tomato paste
Directions:  Mix all ingedients together and bring to a slow boil for 10 minutes.
Pour into sterilized jars and cook in hot water bath for 10 minutes.
Remove jars from water onto a dish cloth on the counter and let sit until you hear the lids pop.
Hints, Tips and Variations:  You can vary the amount of cumin and jalapenos to make it more spicy or hot.  Some people love cumin, others prefer leaving the cumin out.
Good Cooks Tell All :  My family likes it with a little heat to it, but if you want it mild, leave out the cumin.
